Ingredients

  • 12 oz fettuccine or wide egg noodles
  • 3 tbsp salted butter
  • 16 oz cremini or baby bella mushrooms, sliced
  • 5 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 cup heavy cream (or oat cream)
  • ¾ cup freshly grated parmesan
  • Salt, black pepper, chopped parsley

Method

  1. Bring a large pot of salted water to a boil and cook noodles to al dente. Reserve ½ cup pasta water before draining.
  2. Melt butter in a wide sauté pan over medium-high. Add mushrooms in a single layer and let them sear, undisturbed, for 4 minutes. Stir and cook another 3–4 minutes until deeply golden.
  3. Lower the heat, add garlic and thyme, and cook for 60 seconds, just until fragrant.
  4. Pour in the cream, scrape up any browned bits, and simmer 2 minutes. Stir in parmesan until glossy.
  5. Toss the noodles into the sauce, loosening with splashes of pasta water until silky. Season generously, scatter with parsley, and serve immediately.
