Creamy Mushroom Garlic Noodles

Ingredients
- 12 oz fettuccine or wide egg noodles
- 3 tbsp salted butter
- 16 oz cremini or baby bella mushrooms, sliced
- 5 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1 cup heavy cream (or oat cream)
- ¾ cup freshly grated parmesan
- Salt, black pepper, chopped parsley
Method
- Bring a large pot of salted water to a boil and cook noodles to al dente. Reserve ½ cup pasta water before draining.
- Melt butter in a wide sauté pan over medium-high. Add mushrooms in a single layer and let them sear, undisturbed, for 4 minutes. Stir and cook another 3–4 minutes until deeply golden.
- Lower the heat, add garlic and thyme, and cook for 60 seconds, just until fragrant.
- Pour in the cream, scrape up any browned bits, and simmer 2 minutes. Stir in parmesan until glossy.
- Toss the noodles into the sauce, loosening with splashes of pasta water until silky. Season generously, scatter with parsley, and serve immediately.
