Ingredients

  • 1.5 lb sirloin or chuck, cut into bite-size strips
  • 12 oz wide egg noodles
  • 10 oz cremini mushrooms, sliced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp butter + 1 tbsp olive oil
  • 2 tbsp flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire
  • 1 tsp Dijon
  • ¾ cup sour cream
  • Salt, pepper, fresh parsley

Method

  1. Pat beef dry and season well. Sear in batches in a Dutch oven with oil until deeply browned. Remove to a plate.
  2. Add butter, onions, and mushrooms. Cook 8 minutes until soft and golden. Stir in garlic for 1 minute.
  3. Sprinkle flour over the vegetables and stir to coat. Slowly whisk in broth, Worcestershire, and Dijon. Simmer until gravy thickens.
  4. Return beef and juices to the pot. Simmer gently 10 minutes until tender.
  5. Meanwhile, cook egg noodles to al dente. Off heat, stir sour cream into the stroganoff. Spoon over noodles, finish with parsley.
